  • Originally published anonymously in 1885 under title: La cuisine creole : a collection of culinary recipes fom leading chefs and noted Creole housewives, who have made New Orleans famous for its cuisine. Original imprint reads: New York : Will H. Coleman, No. 70 Business Quarter, Astor House.
  • Photo-offset of a copy of the original edition in the Lafcadio Hearn collection of Tulane University, "with additions from other writings of Lafcadio Hearn"; see title page verso. The original pagination is retained; the additions, with a new introduction by Hodding Carter, are on 14 unnumbered pages in the preliminaries and 36 unnumbered pages throughout the text.
  • The selections from Hearn's other works are chiefly from his contributions to the Daily city item, a New Orleans newspaper, consisting of drawings and cartoons and short essays. Included also are selections from Gombo zhèbes, Hearn's collection of Creole proverbs, published in 1885.
  • Three states of the original edition are noted; the sequence has not been determined. See Blanck, J. Bibliography of American literature, entry 7913. State is determined by paging of the preliminaries, by whether the introduction occupies one page or a page and a half, and by the spelling of a word in line 9 of the Introduction as "Brùlot" or "Brülot." The copy from which the present edition is reproduced is in state A, which has 3 unnumbered preliminary pages followed by a page numbered "iv"; the Introduction appears on pages [iii]-iv; and the word in line 9 of the Introduction is spelled "Brùlot."
