In this introductory session, we will discuss the problems of diet and nutrition in our current culture and how, in a nation of relative abundance and wealth, we face a state of confusion about the very basic question of "what to eat?".
We will learn some of the basics of nutrition and the chemical make up of food and explore how this knowledge impacts the ways we think about food and eating. How can we sort through all of the information that we hear about diet and food to figure out (and remember) how to eat healthfully, affordably, and with pleasure?
